Cucumber Salad

Try cooling off with this salad on a hot summer day! Dill is antiviral and the cukes are a good source of potassium. Bring it on!
SALAD
2 English cucumbers
1 red onion, finely diced
1 tsp. sea salt
DRESSING
1/3 cup brown rice vinegar
1/3 cup brown rice syrup or maple syrup
1/3 cup minced fresh dill
Sea salt and pepper to taste
Peel alternate lengthwise strips of cucumber skin to create a striped pattern, then thinly slice cucumber into rounds. Place in a large bowl. Add onion and sea salt. Lightly rub the salt into the surface of vegetables. Set aside to marinate for one hour.
Gently squeeze excess water from vegetables and transfer to a separate bowl. Combine dressing ingredients and pour over cucumbers. Chill salad for several hours before serving.
