Super Slaw



Loaded with enzymes, this colorful slaw is great for digestion!

INGREDIENTS
1/2 cup green cabbage, shredded
1/2 cup red cabbage, shredded
1/2 cup red radishes, thinly sliced
1/2 cup cucumber, thinly sliced
1/2 cup apple, thinly sliced
1 tsp. sea salt
1 tsp. umeboshi vinegar


Place vegetables in a large glass bowl. Use your hands to work the salt and vinegar into the vegetables by gently squeezing and pressing. Set vegetables aside to marinate 1-2 hours, until vegetables are tender and water is released from them. Squeeze the excess water from the vegetables and place them in a serving bowl. If necessary, rinse them to avoid a salty taste. Serve plain or drizzled with lemon juice, brown rice vinegar or a dressing.
