Description

A guacamole recipe so easy you'll have this dip ready in no time!

Ingredients

Scale

2 tablespoons diced red onion

2 tablespoons lime juice

½ teaspoon sea salt

2 ripe avocados, peeled, pitted and partly mashed

½ cup diced cooked carrots

¼ cup chopped cilantro

¼ cup sliced scallions

Instructions

Place the red onion in a small bowl. Add a pinch of the sea salt and a few drops of the lime juice. Rub this into the onion to help it break down.

Place the avocados in a large bowl. Add the remaining ingredients and stir well. The guacamole can be refrigerated for one hour before serving to let the flavors blend. Or you can serve right away. Homemade guacamole is best used the same day, but it will keep, covered tightly, up to one day in the refrigerator.

Notes

Place an avocado pit into the center of the guacamole to help keep it fresh and prevent excess browning.
