½ to 1 cup raw pumpkin seeds (or pepitas)


  1. Heat a medium skillet over medium-low heat. Add the pumpkin seeds. Cook for about five minutes, stirring frequently. It may take less time. Watch closely. The seeds will pop and become light brown. They are done when most have puffed up.2. Remove from heat. Transfer to a bowl and let cool. Enjoy on soup, salad or as a snack.
