A simple yet elegant dessert that's bound to be a showstopper!
Ingredients
Two ripe Bosc pears, peeled
1 1/2 cups of unfiltered apple juice
1/4 cup Mirin rice wine or red wine
2 tablespoons pure maple syrup
2 tablespoons mulling spice
1/2 cup frozen cherries
Pinch of sea salt
Garnish:
Zest of one lemon
2 tablespoons shaved chocolate
2 tablespoons fresh mint leaves
Instructions
Remove a thin piece from the bottom of each pear so that they can stand upright.
In a pressure cooker or instant pot place the apple juice, rice wine, maple syrup, mulling spice, frozen cherries and sea salt. Ring to a gentle boil over medium high heat.
Carefully add the pears and reduce the heat a little. Place the lid on top and bring to pressure but keep the setting not too strong. Once the pressure is up, reduce the heat to low but maintain the pressure and cook for five minutes.
Remove from the heat and let the pressure reduce naturally. Remove the lid and let the pears sit for five minutes. Carefully remove the pears and place them on serving plates.
Pour the spiced apple juice through a strainer into a bowl. Place the juice back into the cooking pot. Return the pot to the stove and cook over medium heat for 10 or 15 minutes, or just until reduced to 1/3 cup of liquid.
Let the reduced apple juice cool for 10 minutes, then pour over the pears. Sprinkle each pear with shaved chocolate and lemon zest. Garnish with mint.
