    Super Quick and Easy Breakfast Ideas Part 2

    Mornings can be super hectic. As a working mom, you can feel constantly on the go with your kiddos and sometimes the quality of breakfast can suffer. Breakfast is the most important meal of the day. It provides you and your family with energy, brain power, a boost of metabolism and so much more. 

    We also know that especially when you have kids, having the same thing every day gets old fast for everyone. “Cold cereal again Mom?” Below we have a bunch of fun easy recipes for you and the whole family to enjoy.

    Nutty Banana Pops:  

    Cut a banana in half, and insert a popsicle stick through the center. Brush the banana with a little almond butter or brown rice syrup (or a mixture of both!) and roll in some crushed nuts (and/or crushed granola, shredded coconut and cinnamon). This cute little breakfast-to-go is portable, tasty and a good source of heathy fiber and potassium. You can freeze any leftovers for a cool treat that can be served as an after-school snack. 

    Mini Breakfast Quiches:

    These are so quick, easy, versatile and can be made the night before to last you through the week. Bake this Tofu Quiche recipe into mini sizes using a muffin pan for the perfect on the go meal with no mess. Your kids will love it. Fill them with some fresh veggies, peppers, onions, mushrooms. The possibilities are endless!

    Leftover Apple Crisp:

    This time of year I can’t get enough of apples in any form, including having them for breakfast! Making a wholesome dessert like Apple Crisp the night before school means you not only have a great dessert to go with dinner but you have breakfast covered for the next morning. Rewarm it and top it off with some almond milk for a special breakfast treat.
