    Super Quick and Easy Breakfast Ideas!

    I don’t know about you but my mornings can be hectic! With one hand, I’m checking emails while preparing school lunch with the other. Then, we dress, brush teeth and it’s a race to the bus. Trying to find the time for a healthy, well-balanced meal can be challenging.

    Actually, it’s not always so crazy because we do have those days that just flow. So, with that in mind, I’m going to try to make your mornings (and my own) a little more stress-free. Here are a few quick and easy breakfast ideas that take very little preparation but still offer a variety of health benefits.

    Avocado & Toast: We all know that avocado is one of the best sources of healthy fats, so this actually makes a terrific breakfast. Spread it over a high-fiber bread with a drizzle of EVOO for a boost of Vitamin E and sprinkle with milled flax seeds for protein.

    Steel Cut Oats: There are so many delicious variations here. You can save time in the morning by preparing the night before and wake up to a delicious, moist breakfast (see below for recipe.) I love oats because they are super-rich in fiber, which will have you feeling full for hours. And they can also be dressed up to your mood. You can top with a touch of maple syrup, chopped walnuts, cinnamon, fresh berries, layer it like a parfait … your options are endless.

    Fruit & Nuts: Again – so quick, easy and versatile. Pretty much anything goes here. Try pears with almonds … and mix with some pre-prepared quinoa for a healthy dose of fiber. Spread bananas over bread with a touch of almond butter and sprinkle with crushed walnuts. Or, a personal favorite, slice up a naturally sweet apple (like Honeycrisp) and add a hearty handful of shelled pistachios – with our without a drizzle of maple syrup.
