    Avocado Sourdough Toast for an Easy, Healthy Breakfast or Snack!

    Avocado sourdough toast makes a quick and simple breakfast or snack, with just a handful of ingredients. It's filling, packed with nutrition and tasty any time of day. 

    This recipe for avocado toast uses crusty sourdough bread topped with creamy avocado spread, microgreens, red radish and lemon zest for a pretty touch.

    In my opinion, it's really all about the bread when it comes to stellar avocado toast. I recommend you use the BEST sourdough bread you can find. And for the ambitious, why not make your own?

    If you start with a solid base, all you need to do is top off your toast with creamy avocado, your favorite spices, and some greens. Ultimately, you'll wonder why you didn't make this at home sooner.

    Ingredients for Sourdough Avocado Toast

    Choosing the right ingredients for this avocado toast will really make it worth your while.

    Here are my must-have ingredients to make a delicious homemade sourdough avocado toast:

    Sourdough Bread

    I like to use a sourdough bread that is a mix of whole wheat and white flour. Personally I find the 100% whole wheat a bit tough, but if you enjoy it feel free to use it. One type of bread I do not recommend using is regular yeasted bread. You want a thicker, sturdier bread like sourdough to hold up the list toppings without getting mushy.

    Ripe Avocados

    Be sure to choose nice ripe avocados. The California Avocado Commission has great tips on how to pick avocados when you're at the grocery store, as well as how to ripen hard avocados if that's what you have at hand.

    Red radishes

    I chose pickled red radishes to top my sourdough avocado toast. However, you should feel free to use simple raw sliced radishes too. Either way, radishes help your body digest the fat in the avocados. And they provide a refreshing quality with their crisp texture.

    The Crunch

    I love crunchy versus creamy. To counter the rich creaminess of the avocado spread, top off this avocado toast  with fresh microgreens like sunflower sprouts. Toasted sunflower seeds are the perfect touch and also add the crunch factor that makes it so fun to eat.

    Extra Flavor

    Finally, remember that simplicity is your friend when it comes to this healthy plant-based breakfast. All you need is a nice crunchy sea salt and a drizzle of olive oil. But if you want to get fancy, you can add freshly ground black pepper and your favorite herbs. A flavorful spice blend like zata'ar or everything bagel seasoning would be amazing as well.

    Description

    Avocado Sourdough Toast makes a quick and simple breakfast or snack, with just a handful of ingredients. It's filling, packed with nutrition and tasty any time of day. 


    Ingredients

    Scale

    1 teaspoon lemon juice (about the juice of ½ lemon)

    1 avocado, pitted

    Sea salt

    Optional: black pepper or cayenne

    3 slices sourdough bread

    Toppings: Sliced red radish (can be pickled), microgreens (like sunflower sprouts), toasted sunflower seeds, lemon zest, olive oil & flaked sea salt


    Instructions

    Remove the zest from your lemon. Then juice the lemon, removing the seeds.

    Cut the avocado in half, remove the pit and scoop out the avocado in a bowl. Using a fork or potato masher, mash the avocado. Add a few pinches of sea salt and the lemon juice, then mash it again. Optional: You can add black pepper or cayenne.

    Toast or grill the bread. Spread with avocado spread. Top with your choice of toppings like pickled radish, micro-greens of your choice. Drizzle lightly with olive oil and sprinkle with a pinch of the flaked sea salt.
